WIAW #16

I thought maybe I would do another WIAW post this week for you all. It not only helps me to get an extra blog post in for the week to help me reach my 5 for Five goal, but it also helps me to be more accountable with my eating. I only forgot to take one picture today, so I think I did a pretty good job today. Here's what I had:

For breakfast, I had one egg plus one egg white and whole wheat toast with some spray butter and some homemade peach preserves. I also had some cantaloupe on the side:

For my morning snack today, I had some reduced fat Wheat Thins and some 2% milk Sharp Cheddar cheese - my new favorite snack:

I also had some carrots to hold me over until lunch:

Lunch today was my homemade chicken salad on a low carb tortilla with some 2% milk provolone cheese and some lettuce. On the side, I also had some Special K Cracker Chips and some strawberries:

After lunch, I decided that I needed something sweet, so I had some Sugar Free Jell-o with some Fat Free Cool Whip:

My afternoon snack was some Yoplait Light yogurt with an unpictured apple:

For dinner, I tried a new recipe - Skillet Bowtie Lasagna - so, so good!

As always, after dinner I had a bowl of cereal. Tonight's choice was Cinnamon Life:

I came home during lunch today and did some prenatal strength training. I love to get my exercise in early so that I can have some extra time with the family in the evenings!!

I am still trying to track my points just to be sure that I'm not overdoing it. Today was a pretty good day for me. I'm hoping to gain momentum to keep eating well throughout the final trimester. I'm almost there!!

5 for Five


So here it is a week after my first 5 for Five post and it's time for me to check in again and see how I did with reaching the goals that I set last week.

So here is my first 5 for Five

1. Exercise at least 3 times.
- Actually got in 4 workouts Mon - Fri last week.

2. Post at least 2 blog posts (in addition to this one).
- Only got in one :-(

3. Track every B, L & T this week.
- Very hard for a pregnant lady to do!!

4. Stay off FB in the evenings until Addison is asleep.
- I started off doing pretty good, but then caved.

5. Try one new healthy recipe.
- I tried more than one! Posts coming soon!

I hit two of the 5 goals I set for myself last week. While I'm not thrilled that I didn't hit more than that, I am trying to give myself a little bit of slack on this. I'm also hoping that I hit more of my goals for this coming week. Here are my goals for this week.

1. Reach my 8,000 step goal every day.

2. Post at least 2 blog posts (in addition to this one).

3. Track every B, L & T this week.

4. Stay off FB in the evenings until Addison is asleep.

5. Start a new book.

I kept most of the same goals that I had from last week hoping that I make them this time. Let's hope that I do better this week. Don't forget to check back in next week for an update! 26 Weeks

I'm now 6 1/2 months pregnant. It still seems like time is crawling my for me. But I know the little one will be here before we know it! We've started thinking about plans for the Summer and everyone keeps reminding me that I will have to see when the little one makes his debut and how I am feeling before we plan anything definite. I'm hoping that I can bounce back as quickly as I did after Addison. The first few days to a week was rough, but I made it through. I'm also hoping that the exercise that I am getting in now will help me bounce back quickly.

I'm still feeling really great, although I do get tired quicker than before and I'm also starting to notice a little bit of swelling here and there. I'm trying to take care of myself so I can avoid the kankles that I had last time. Hope everything works!!

How far along: 26 weeks

Percentage Complete: 65%

Baby is as Big as: The size of a head of lettuce and the length of a hothouse cucumber.

Maternity Clothes: Everyday.

Sleep: Still waking up 3 - 4 times a night.

Best Moment This/Last Month: Love feeling the movements getting stronger.

Movement: Baby loves to bust a move - especially in the middle of the night!

Food Cravings: Fruit, fruit and also fruit!

Gender: BOY!

Wedding ring on/off: On

What I am looking forward to: Not really looking forward to it, but I have my glucose test that I am looking forward to being done with!!

Days until my next appointment: 19 days

Last night, I was able to get in a prenatal strength workout. Today, we did some shopping, then this evening we all went for a 3 mile walk. It was a beautiful day...actually, the first one we've had in a while and the last one we will have for a couple more days, so we wanted to soak it up while we had the chance!

Crockpot Chicken Fajitas

Well, today is National Sticky Bun day. I made a batch of them to take into work today, but I didn't get a chance to take any pictures of them to do a blog post to share with you all. I hope you will forgive me. What this does mean is that I will have to make another batch of them to share with you all very soon. If not, I will make something equally delicious that I know you will all love. How does that sound? Deal?

What I am sharing with you is another easy peasy recipe using the Crockpot. I have been trying to find some new crockpot recipes to make for after the baby is born. Ideally, I would love to find some freezer meals that I can portion out ahead of time and then just throw in the crockpot in the morning and have a delicious meal ready for dinner in the evening. This is a recipe that was really good and really easy. I absolutely love fajitas and having a way to make them in the crockpot is even better. These aren't the most beautiful things when they're cooked, but then once you shred up the chicken and stir them around a bit, no one will ever know! This one will definitely be added to my list to make after baby arrives. Here's the recipe:

Servings: 6
Points+: 5

1 yellow onion, sliced
3 sweet peppers, sliced
1 ½ pounds boneless chicken breast
1/4 to ½ cup chicken broth, depending on preference (leave this out if you prefer a drier fajita filling)
½ teaspoon salt
2 tablespoons cumin
1 ½ tablespoons chili powder
Squirt of lime juice
Fajita fixings

Combine sliced onion and peppers in the bottom of a greased crockpot. Lay chicken on top of veggies. Pour chicken broth over top. Sprinkle everything with cumin, salt, and chili powder. Give a nice quirt of lime juice over the top. Cover and cook on low for 4-8 hours (or on High for 4 hours) or until meat is shreddable. When meat is done, shred with two forks and stir back into juices. Serve meat mixture with slotted spoon on tortillas with your choice of fixings.

In an effort to spend more time with my family, I have been trying to get some of my exercise in during my lunch breaks. It's times like this that it's really nice to live close to the office! During lunch yesterday, I got in my 2 mile Walk Away the Pounds video. At was nice to know that I already had worked out and didn't have to try to fit it in during the evening routine. It also gave me a little extra time to work on the sticky buns :-)

5 for Five


So I found some new blogs recently. I'm always looking for new ones to add to my feed, and I'm especially interested if they're local blogs. I love the idea of having a blogging community. I have seen a couple of Charleston area blogs in the past, but not too many that I could really relate to. I found a lot more today that I have added to my feed to see if I want to continue to follow them. If I like them, I will go ahead and add them to my Blogroll page, so be on the look out for that.

One of the blogs has something called 5 for Five. Here is a link to the information about what this is. I think it sounds like a great idea and something that I really need right now. I love accountability these days and I'm trying to have more, so I thought this would be a great way to add some more to my life.

So here is my first 5 for Five

1. Exercise at least 3 times.
The last few days, I have been out of town and have gotten no exercise in. I can feel this, both in my body and my mind. I love the effects that exercise have on me and I need to get back to it and get active again. I would really like to exercise more than 3 times this week, but I am getting to the point in my pregnancy that some nights, I am just worn the heck out and need to rest.

2. Post at least 2 blog posts (in addition to this one).
I don't like not doing very many blog posts these days. I really need to get back into the habit of posting a few days a week. I originally was saying one blog post, but I pushed it up to 2. Hoping I can get this one it for you all!

3. Track every B, L & T this week.
I tend to not track everything that I goes into my mouth and I think this is catching up to me. I'm gaining weight faster than what is recommended for me, so I really need to get this under control and I think tracking better will help me.

4. Stay off FB in the evenings until Addison is asleep.
I have become aware that I spend a lot of time on FB, especially on my phone. I attribute this to a pregnancy page that I belong to and like to check-in with. But I hate the time that it takes away from Addison. So I really want to stay off of FB until after she has gone to sleep for the night.

5. Try one new healthy recipe.
I have gotten kind of slack about my healthy recipes and especially trying new ones. So I want to try a new one at least once a week. This will hopefully give me some new ideas that are easy and delicious.

Strawberry Valentine's Day Cupcakes

Happy Valentine's Day everyone! Personally, I am on the fence about this holiday. Yes, it's great to take a day and show the one you love how important they are to you, but why does there have to be a special day for this? Why do we have to be reminded to do this? And why does everything have such a crazy markup this week? Wait until the weekend and everything will be half price! I realized just how commercialized this day is this morning after I dropped my daughter off at school. They are having a party and I signed up to make cupcakes. I don't mind at all. I absolutely love to bake. But then I also had to take in a bag of candy for her to share. AND I had to do valentine's for all the kids in the class. I came to the realization this morning, that I had put a lot of time and money into this day for my daughter. She was very excited about her party and the cupcakes, so that makes it all worth it, but stil...

These cupcakes turned out perfect! I have another recipe that I will try soon using the strawberry cake mix that is a lot lighter, but I wanted to do these ones for her party. The smile on her face made all the effort worthwhile. She was so proud this morning going into school with the cupcakes. They call me Betty Crocker at her school because I am always making some kind of treat for her class. I don't mind. It lets me experiment in the kitchen and gives me a place to send the treats so they don't stay in the house. I have to confess that I have absolutely no idea where the recipe for the cupcakes came from. I have had it for years and don't remember where I got it. The frosting is Wilton's recipe and is delicious! Here are the recipes:

Points+: 11

1 strawberry cake mix
1 c. flour
1 c. sugar
¾ t. salt
1 1/3 c. water
1 c. sour cream
2 T. vegetable oil
2 t. vanilla extract
4 egg whites

Preheat oven to 325 degrees F. Line 24 cupcake cups with liners.

Stir together the white cake mix, flour, sugar, and salt in a large bowl until well mixed. Pour in the water, sour cream, vegetable oil, vanilla extract, and egg whites, and beat with an electric mix on low until all the ingredients are mixed and moistened but some lumps still remain, 4 minutes.

Fill cupcake liners about 2/3 of the way with the batter and bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 18 - 22 minutes. Allow to cool
before frosting.

1/2 cup solid vegetable shortening
1/2 cup butter or margarine, softened
1 teaspoon clear vanilla extract
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk
sprinkles (optional)

In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.

For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.

EXERCISE:Another confession here. I was so tired yesterday. I didn't get any formal exercise in. I did make sure to get at least 8,000 steps in and ended up just over 9,000, but that was it. But I plan to do some prenatal pilates tonight.

24 Weeks

Hey friends! So I am officially 24 weeks pregnant. That's six months! It really seems like the belly has really popped out over the last couple of weeks. The little one has really gotten pretty active, too.

So I never got a chance to do my gender reveal post. But we are having a boy. Yes, we will have one of each, so everything in the house will be even Steven. Seems just right since this is the last one we are planning to have. I've really been feeling more pregnant lately, too. I even told TC last week (after my concealed weapons class!!) that maybe I need to start acting like a woman that is 6 months pregnant. I'm still feeling great, but I am realizing that I'm getting tired more easily these days and the aches and pains come more easily as well. So maybe I need to relax a little more. We'll see how that goes!!

How far along: 24 weeks

Percentage Complete: 60%

Baby is as Big as: The size of an eggplant or a cantaloupe.

Maternity Clothes: A daily occurence.

Sleep: Still waking up 3 - 4 times a night.

Best Moment This/Last Month: Finding out that we're having a little boy!!

Movement: All the time. He's even been getting the hiccups the past couple of days.

Food Cravings: I have been loving cereal lately, but that's pretty normal for me.

What I am looking forward to: My Dr's appt on Friday!

Days until my next appointment: 5 days!

I'm still trying to get in some type of exercise almost every day, while still taking rest days when I need to. Today, we went for a 3 mile walk and I also got in some of my prenatal Pilates video. It really helps me to relax a little before bed.

Oatmeal Cookie Pancakes

Did you know that today was National Pancake Day? I had no idea until I heard it on the news this morning. When I heard that, the thought entered my mind to load up the griddle and pancake mix and make some for my co-workers this morning for breakfast. But then reality kicked in and I realized that I didn't have time to do this. If I would have known last night, it might have been a possibility. But since I didn't they were just going to have to go hungry today. Ha! Yeah right. Plus, I had just brought in some pound cake yesterday, so they should be good for a while. Instead, I decided to make pancakes for dinner tonight. I looked through a few different blogs and found a recipe for Oatmeal Cookie Pancakes. Maybe I am on an oatmeal cookie kick, since I had just made the Oatmeal Cookie Pie (so good!!) last week. But these are the ones that looked good to this pregnant lady. I remembered to plug them into the recipe builder on the WeightWatchers website first and they didn't seem that bad.

I think I might need to do breakfast for dinner a little more often. When I texted TC to ask him what he thought about having pancakes for dinner tonight, his response was, "Awesome!" I didn't realize he was such a big fan. Maybe I need to find some more pancake recipes! Ha! Here's the recipe:

Servings: 5
Points+: 8

2 large eggs
2 cups fat free buttermilk
1 tablespoon pure maple syrup
4 tablespoons light butter, melted and cooled
1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
heaping 1/2 cup old fashioned oats
2 tablespoons packed light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon ground cinnamon
pinch freshly ground nutmeg

{If you aren't going to serve the pancakes until you've cooked all of them, preheat oven to 200 F. Spray a wire rack with cooking spray and set it inside a baking sheet then place the baking sheet in the oven.}

Add the eggs to a medium bowl and whisk to break them up. Combine the buttermilk, maple syrup, melted butter and vanilla in a measuring cup then pour them into the eggs and whisk to incorporate. Add the flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg to the bowl and stir just until barely combined (the batter may still be lumpy, that's fine). Set the batter aside to rest for about 5 minutes.

Spray a large skillet or griddle with cooking spray. Set over medium-low heat. When the pan/griddle is warm, ladle about 2 tablespoons of batter into the pan for each pancake. Spread gently into a circle. Cook on the first side until the edges are set and bubbles form on the surface. Use a spatula to flip the pancakes and cook on the second side until golden brown and cooked through. {If not serving immediately, transfer the pancakes to the wire rack in the oven.} Repeat until you've used all the batter.

Makes about 20 pancakes.

During lunch, I was able to get in a Prenatal strength workout. The video I have is Denise Austin's Fit & Firm Pregnancy. I don't know about the Firm part, but I'm definitely trying to get the Fit part during this pregnancy! I also got in over 10,000 steps today. That's pretty good for this pregnant lady!
