Weekly Food & Fitness Plan #50

Happy Sunday evening everyone! Sorry I'm so late posting it's been a heluva crazy week and day for us. I spent most of the week studying to take my real estate exam. I'm very happy to report that I PASSED!! I finally took the test Thursday and was so relieved when I saw that I passed both sections! I have already sent in my application and my license should be sent to my broker within the next one to two weeks and them I can start selling. I'm so excited!!

We also listed out house with the agency with I will be working for this last week. We had our first showing today, so we spent yesterday evening and today busting our booties to get it ready to show. Fingers crossed that they loved it and will make an offer. I know it's a long shot that the first showing will be the ones to buy it, but it never hurts to be optimistic, right?

I'm so excited to do a run with my Moms Run this Town group next Saturday. I'm not sure if I will do 5k or 10k yet, but I'll have fun either way!

Strawberry Frosted Donuts

Good morning friends! We made it through another Monday! This is going to be a busy week for me since we have Addison's birthday party this weekend. I still can't believe that she's going to be 5 already. That's half of a decade! Time goes by way too fast once you have kids. I'm trying to enjoy every moment that I can. Last night was spent at a make-up soccer game. Camden and I ran up while TC and Addison drove. It was such a beautiful night. I took advantage and got some exercise in, too.

Since strawberry season is in full swing and I've been making so many sweet things with them, I thought I would share one of my latest indulgences with you. Last Friday, I made these strawberry donuts. They're actually not bad for you either. I think the biggest thing that makes them better for you is that they're baked. I love my donut pans. I don't use them enough either. I might try to find some more recipes in the near future that gives me a chance to use them. The possibilities really are endless! Here's the recipe:

adapted from Sally's Baking Addiction
Points+: 3
Servings: 6-7

1 c. all-purpose flour
6 T. sugar
1 t. baking powder
4 T. low fat or fat free vanilla yogurt
2 T. milk
1 egg
1/2 t. vanilla extract
1 T. unsalted butter, melted

3-4 strawberries
1 T. milk
1 - 2 cups confectioners' sugar, sifted

For donuts: Pre-heat oven to 325 degrees. Spray donut pan with non-stick spray and set aside In a large bowl, combine flour, sugar, and baking powder. Set aside. In a small bowl, whisk together the yogurt, milk, egg, vanilla, and melted butter. Slowly add wet ingredients into dry- just until fully combined. Do NOT overmix.

Pipe the batter into a 6-donut pan. Fill each opening about 2/3 full. I used a ziploc bag with the corner cut off for this. Bake 8 to 11 minutes until donuts are firm and goledn brown. They will spring back when touched. Mine took a minute or two longer. Just keep an eye on them.

Let cool in pan for about 5 minutes before removing. Once cool enough to touch, dip the donuts into the glaze a few times, depending on how much glaze you want on them. You could also wait for them to cool completely before doing this.

For frosting: Slice and puree strawberries. Pour into a medium bowl and add milk. Slowly stir in 1 cup sifted confectioners' sugar, adding more until you reached the desired consistency and coloring.

I hope you enjoy these as much as we did. I also shared them with our neighbors who also liked them. It's such a great Spring breakfast (or dessert!) idea. Be on the look out for more strawberry recipes coming your way.

Weekly Food & Fitness Plan #35

Happy Sunday everyone! I hope you're all having a great weekend. We have had absolutely gorgeous weather the last few days and have been trying to soak it up as much as possible. I'm hoping that we won't have anymore cold snaps this season, but the way this year has been going, you never know! Here is a picture I posted comparing last Easter to this Easter!
What a difference a year makes, huh?!

I had a great on-plan week this past week and I'm hoping to keep the momentum going. I got in some kind of activity every day, except for Sunday. It felt so good to be exercising again! If I keep this up, I will definitely be reaching my goal soon!

One Pot Chili Mac & Cheese

Well, here we are again! Another hump day, another post. I have to give you all an update on my workout efforts for this week. I didn't get any exercise in on Sunday, HOWEVER....Monday, I ran 3.3 miles and last night, I went to Zumba with my neighbor. She's been trying to get me to go with her for a couple of weeks now and last night I finally said yes! It was a lot of fun and a great workout. I'm definitely feeling it this morning, which is good and bad. I'm glad I'm sore, because I know I got in a good workout, but I'm mad at myself because I know it's partly because I haven't been very active lately. Anyway, I'm pretty proud that I've been active this week and I'm hoping to keep it up. It feels good to be back on track, and the scale is rewarding me for my efforts!

I know I usually do a WIAW post when I post on Wednesdays, but I wanted to share the new recipe with you all that I've been talking about. I think I will still call this WIAW, since I did eat this, and it might even have been last Wednesday! I've had this recipe pinned for a while now. When I was making up my menu plan for last week, I came across it and decided to give it a try. I'm really glad I did because it was so good. Everyone in the family loved it! It's pretty easy and comes together quickly, too! Winner, winner skillet dinner! Lol! Here's the recipe:

One Pot Chili Mac & Cheese
adapted from Damn Delicious
Servings: 8
Points+: 9

1 T. olive oil
2 cloves garlic
1 onion, diced
1 lb. lean ground beef
4 c. beef broth
1 (14.5-ounce) can diced tomatoes
1 can white kidney beans, drained and rinsed
1 can kidney beans, drained and rinsed
2 t. chili powder
1 1/2 t. cumin
salt and pepper, to taste
10 ounces elbows pasta
3/4 c. shredded 2% milk sharp cheddar cheese

Heat olive oil in a large skillet over medium high heat. Add garlic, onion and ground beef and cook until browned and veggies are tender.

Stir in beef broth, tomatoes, beans, chili powder and cumin. Season with salt and pepper. Bring to a simmer and stir in pasta. Bring to a boil. Cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.

Remove from heat. Top with cheese and cover until melted, about 2 minutes.

Happy Easter + Weekly Food & Fitness Plan #34

Happy Easter everyone! I hope you are all feeling as blessed as I am this morning...
...although not so much by Mother Nature.
In spite of the weather, we are still planning to have a wonderful day! After church, we are headed to my parents' house for the day. 

I threw together a batch of Orange Rolls last night to bake for breakfast this morning. I can't wait! Yum!

I am actually going to make a pretty good effort to get some workouts in. I'd like to do at least 2 videos, plus a run or 2 this week. I know that may not seem like much, but it's more than ice done in over a month.

Guess what day it is!!!! It's huuuuump day!! Well, kind of. Is it still hump day if you have Friday off? Hmm, something to think about. In the meantime, I thought I would team up with Jenn at Peas & Crayons to give you another What I Ate Wednesday post again. Some things have changed, some things have not. I know the suspense must be killing you, so I won't make you wait any longer!

Breakfast was two hard boiled eggs with a banana bread english muffin and some strawberries. 

Lunch was a chicken Caesar salad and some cantaloupe.

Dinner was a delicious new recipe that I tried and will be posting on the blog very soon.

For my snacks, I had a Shakeology shake made with 1/2 if a frozen banana, some almond coconut milk and a teaspoon of peanut butter. I also had an apple and some light string cheese.

I may also have had an unpictured bowl of Rice Krispies...maybe :-)

I hope you all have a great week. I'm going to try to get a recipe up for you within the next couple of days.

Weekly Food & Fitness Plan #33

Hey there! Happy Sunday! I hope you're all having a great weekend! We've been camping again this weekend and have had some perfect weather for it! No rain and warm, but not too hot temperatures. If only it could stay like this!!

I have Good Friday off this week from work, so I'm looking forward to another short work week. It looks like it might be another busy one, too. But that's kind if the norm these days!

Here's the plan for this week:

Sunday - Balsamic Chicken Breasts
Monday - Skinny Orange Chicken
Tuesday - Turkey Tacos
Wednesday - One Skillet Chili Mac
Thursday - Leftovers
Friday - Dinner Out

I'm hoping to get a run in today, or at least a family walk. I might try to run a couple of more times this week, too. And that's all I will commit to right now. I know, I know. I'll get better about this soon!

Hey Everyone! I hope you're having a great week. This is my Thur-Friday, so I'm pretty excited. We're going camping again this weekend and plan to spend some time on the lake. We're supposed to have a beautiful weekend and I can't wait!

I'm going to be honest with you all. I have been struggling lately with being OP. In the past 3 weeks, I think I might have had 2 OP days. It's so hard for me right now. I know I've been busy getting the house ready for the move, but I hate giving excuses. I'm still working hard to get my steps in each day, but there have been a few days lately that I haven't reached my 10,000 a day. I think accountability is so important in a weight loss journey. So I guess I'm trying to be accountable to all of you.

My goal was to lose the pregnancy weight by the time Camden was 9 months old. I got close, but didn't reach that goal. Now, my goal is to lose it all by his first birthday, which is fast approaching. I don't have much to lose, only 4 pounds. I fit into all of my clothes. But it's just something about getting back down to where I was before I got pregnant that makes it important to me. I know there are celebrities that reach their pre-pregnancy weight within weeks of having their babies. I'm sorry. That's just not realistic to the typical new mom. It bothers me how much the media talks about this subject. My favorite celebrity dealing with pregnancy weight loss is Kristen Bell. Here is an article that discusses her feelings on it. I love that she isn't giving into the pressures of Hollywood to lose the weight. Sure, she wants to lose it. But she realizes that a woman's body changes after having a baby. So nice to see someone that is relatable!

As of today, I have 45 days to lose these 4 pounds. Sure, that's very attainable. But I just have to find the motivation and mindset that I need to do it. Any support you can offer me is welcome.

Weekly Food & Fitness Plan #32

Good Sunday morning everyone! I know, I know. I haven't done a post since last Sunday, but things are still hectic around the SLY household. We went camping this weekend, too which just added to it. We are talking about going camping next weekend as well, so it might be a little while before things calm down a bit. We had an absolutely beautiful weekend for camping.

It's so beautiful on the lake. After the nasty winter we had, we definitely want to take advantage of the great weather we're having now!
Someone sure enjoys camping!

Here is what I have planned for this week:

I'm not going to do a fitness plan again since we're still a little crazed. I might try to sneak in a couple of workouts this week, but nothing definite, so ill have to see how my week goes. I did get a run in again yesterday and would like to get one in today if the rain holds off.
