Sunday Food Prep

So, in this week's Food & Fitness Plan, I mentioned that I am participating in a 5 Day Clean Eating Challenge. I will be doing a post on that later in the week for you, but I wanted to go over the meal prep that I did for this week on Sunday. I am coming to the end of my time working for the local United Way and honestly, I'm glad that it's coming to an end! My life has been pretty busy since I've been working there. As I've told you before, I am a very structured person, and whenever I get thrown a curveball, I'm not happy. The last 8.5 weeks have been a huge curveball for me. When I am at my usual job, I only live about 3 or 4 miles from where I work. So it's pretty easy for me to swing by the house during lunch time to do some food prep for dinner or to even turn on the slow cooker so dinner is ready for us when we come in the door in the evenings. But with United Way, I am working about 40 minutes away from home, so that definitely isn't an option right now. What I've been doing is to do a lot of my food prep on the weekend. This Sunday, I was definitely in the zone. I got a lot done in just a little bit of time. I was trying to get as much done as possible while Camden napped. Thankfully, it wasn't a short nap! Here is the food prep that I did on Sunday:

• Prepped and roasted a butternut squash to eat with my lunches this week.

• Since, Camden was sleeping, I decided to take my chopper outside to chop the onion and pepper.

• Made the meat sauce we're having for dinner later this week.

• Mixed up and grilled the turkey patties that I'm going to be eating for lunch this week.

• Boiled some eggs for snacks this week.

• Prepped and roasted some chickpeas for snacks this week.

I also browned some ground turkey and soaked the pinto and black beans that I'm using in the Mexican Chili we are having later this week.

Doing all of this on the weekend helps to make things go a little smoother during the week. Since I've done all this, I'm hoping that I might be able to squeeze in some of the workouts I have planned for the week.

Weekly Food & Fitness Plan #61

Happy Monday everyone! I hope you all had a great weekend! Ours was hectic as usual still working on the house and had a sick little one at home as well. He is on the mend, but still not 100%. I am participating in a 5 day Clean Eating Challenge this week and had a great food prep day yesterday. I'll do a separate post on that, but wanted to share my plan for the week:

Sunday - Chicken Bog with the neighbors
Monday - Subway
Tuesday - Grilled Pork Chops
Wednesday - Pasta & Meat Sauce
Thursday - Grilled Flat Iron Steaks
Friday - Crockpot Mexican Chili
Saturday - Grilled Rotisserie Chicken

Sunday - Rest
Monday - Yoga Meltdown
Tuesday - Ripped in 30
Wednesday - Yoga Meltdown
Thursday - Ripped in 30
Friday - Rest
Saturday - 3 mile run

Weekly Food & Fitness Plan #60

Hey friends!! Is everybody ready for some Monday Night Football? Go Steelers!! I have two of the cutest Steelers fans ever!!

Sorry I'm so late in posting this. It's been a crazy couple of days and I haven't had a chance to sit down and write my post yet. I hope you all had a great weekend. Ours was pretty good. The kids and I did some shopping with my mom, sister and niece while TC did some work on the house. We also got our carpet installed over the weekend and it looks so, so nice! Now we are looking at starting to move everything in slowly and hopefully have it all moved in by early November. Fingers crossed everything goes smoothly! I did wake up with a head cold on Saturday morning and it's slowly spreading to my chest as well. But I'm trying to rest and eat lots of vitamins to kick this thing to the curb. Hope to be rid of it by next weekend!

Here is what this week is looking like:

Sunday: Crockpot Chili
Monday: Grilled Turkey Patties
Tuesday: Grilled 7-Up Chicken
Wednesday: Grilled Hamburgers
Thursday: Baked Chili Crescents
Friday: Crockpot Chicken & Stuffing
Saturday: Leftovers/Contingency

My fitness is still pretty hit or miss. I've been trying to do some running mixed with some yoga, but with this clogged up head, there is no way I'm even going to attempt a downward dog! Lol! So forgive me for skipping the fitness plan for the week again.

Life Lately

Well, hello there! Look at me, writing a post that isn't my typical (as of late) Weekly Food & Fitness post. It's been a while since I've done a post devoted to filling you all in on what has been going on with us lately, so I figured there is no time like the present, right?

The biggest news is that we finally closed on our house on October 3rd.
Since, then we (and by we, I mean TC) have been spending the majority of our time working on getting it ready to move into. Unfortunately, we haven't sold our house yet, so it looks like we will be paying two mortgages for a little while. We've dropped the price of the house a couple of times and have been averaging a showing or two each week, but still haven't had any offers. Fingers crossed it happens soon, right?

There aren't any major renovations that we are doing to the house, except for new carpeting upstairs and down the stairs. So, yeah, I guess there is just one major renovation then. Ha! We have been painting rooms so that we can move the furniture in (hopefully) soon and won't have to move the furniture after we move in. We're not exactly sure when we will be making the official move right now. While we really want to be in the house, we hate to move all of the furniture out of the house we're selling. So we still have to figure that out.

We have gone camping a couple of times this Fall. The first weekend was the second weekend in September for our annual float down the Edisto, which didn't happen because of weather, etc.
The second weekend was the last weekend in September to Edisto beach.

 We love it down there and would love to go back this Fall, but with the new house, we aren't sure if it will happen.

Addison started Kindergarten this year. I did very well on the first day and didn't cry. And I didn't cry after, either. I was pretty proud of myself!
I always imagined I would be a sobbing mess on her first day. I'm so glad that she loves her new school and her teacher. It helps to make it so much easier to drop her off in the morning.

I did the Run or Dye race in September, too. I had meant to run it, but ended up being a little under the weather and had to walk it. We still had a good time though. I might do it again next year.

Camden is still growing like a weed. He is very spoiled, but very sweet and all boy.
Such a huge difference from my little girl! He is into everything, always on the go and has earned himself the nickname of "Destructor." He had a bout of Hand, Foot and Mouth which, of course, coincided with Addison's first week of school and made me a mess. When it rains it pours, right? He was such a little trooper though and was back to his old self pretty quick, even though he still looked pretty pitiful for awhile longer.

I'm still doing my work for United Way. I'll be here until November 7th. It's been quite a learning experience for me. And I'm not going to lie, I'm actually looking forward to going back to my regular job.

So that pretty much sums up our lives lately. It's been a pretty busy Fall for us so far and doesn't look like things are going to slow down anytime soon. But I probably wouldn't know what to do if they did!

Weekly Food & Fitness Plan #59

Hey there!! I hope you're all having a great weekend. I'm actually writing this Saturday night to be sure that it gets posted. I'm having to start over again on WW. I've completely been off the last month or so and have gained more pounds than I want to admit. If I put it on here, that means that I have to stick to it, right? Fingers crossed!!

So, I've realized that most weeks, I have one day where the meal plan doesn't always happen. These days can happen because we have a showing on the house, we end up with unexpected company, we have to run some errands in the evening or some nights, I just don't feel like cooking. Because of this, I have decided to add a contingency day. This day can be one where we go out to eat or where we have leftovers. Some weeks, we may end up having more than one contingency day, but for now, I'm just going to include one of these days each week. So here is how this week is shaping up:

Sunday - Slow Cooker Chicken Fajita Soup
Monday - Sweet & Tangy Grilled Chicken
Tuesday - Crockpot Chicken & Stuffing
Wednesday - Crockpot Turkey Chili
Thursday - Grilled 7-Up Chicken
Friday - Dinner Out/Contingency Day
Saturday - Chili Cheese Dog Bake

I'm going to attempt to have a plan for my fitness, but in the back of my mind, I'm having some serious doubts about it happening this way...

Sunday - 3 mile run
Monday - Yoga Meltdown
Tuesday - Yoga Meltdown
Wednesday - 3 mile run
Thursday - Yoga Meltdown
Friday - 3 mile run

Weekly Food & Fitness Plan #58

Happy Sunday friends! I'm writing this before the rest of the family is up, since I'm sure these will be the only calm moments I have today. We closed on our house on Friday and have been working on it since then. I can't say we've been working non-stop, because we did take a break last night to go to my sister's house to celebrate my mom's birthday.

Before everyone starts stirring, let me share my plan (or lack of) for the week. 

Sunday - Grilled Hamburgers
Monday - Crockpot Chicken Fajitas
Tuesday - Kielbasa & Potato Hash
Wednesday - Dinner Out
Thursday - Crockpot Chicken & Stuffing

Saturday - Cheeseburger Pasta

I have no idea how this week will go in the evenings, so I have absolutely no plan for this.
