Weekly Menu Plan & Fitness Recap {4/26}

Happy Sunday everyone!! Pretty excited that I'm getting this posted on a Sunday, even if it is the middle of the afternoon before I'm finally getting it done!

We have had a wonderful weekend, with the exception of a croupy litte boy. (It's crazy to me quickly it comes on!) But we aren't even letting that bring us down! We had visitors from North Carolina, Virginia and even Texas!! We have one special little girl on our hands!! The party was great and I think everyone hD a good time. We have yet another busy week before my sister-in-law gets married next weekend. Hopefully, the week will go quickly becuase I'm really excited about the wedding!!

Here's what I have planned:

Sunday - Grilled Hamburgers
Monday - Grilles HoneyLime Chicken 
Tuesday - Pasta &Meat Sauce 
Wednesday - Salsa Chicken
Thursday - Grilled Fish
Friday - Rehearsal Dinner
Saturday - Wedding!!!

Fitness Recap:
Sunday - Ripped in 30 - Level 3
Monday - 2 mile run
Tuesday - 3 mile run
Wednesday - Ripped in 30 - Level 4
Thursday - Rest
Friday - Rest
Saturday - Rest

I took more rest days than I would have liked, but I needed my sanity this past week. So I had to skip a couple. I'm hoping to make up for it this week though!

WIAW {4/22}

Ahh!! I got so wrapped up in this week's stuff, that I almost forgot to write this post!!  I'm glad I remembered because it's been awhile since I've done one!

I've mentioned to you all before that I did the Advocare 10 Day Cleanse (and LOVED it). Prise that I'm going to do a full summary post of the cleanse for you all, but I thought I'd give you a sneak peak of  one of my days of food. It's pretty simple. Just try to eat whole foods. Easy, right?! Lol!

Two egg white, strawberries and steel cut oatmeal made with cashew milk.

Banana with some PB2.

Zoodles with spaghetti sauce, grilled chicken and sweet potato.

Almonds with some cantaloupe.

Grilled turkey patty with brown rice and broccoli.

See? Easy easy. Honestly bough. It really wasn't that hard to do. I just had to make a couple of tweaks from what we normally eat.

Menu Plan Monday {4/20}

Soooooo, it looks like I've been having some trouble posting my menu plans on Sundays. So, let's call this one Menu Plan Monday, shall we? It's going to be a quick post though. Lots of stuff going on this week getting ready for my daughter's birthday party this weekend. My daughter is so loved! She has people coming all the way from Alabama and Virginia to celebrate with us!! We are so blessed!!

So, here's what I have planned for the week:

Monday - The Ultimate Grilled Chicken
Tuesday - Taco Tuesday!!!
Wednesday - Grilled Hamburgers
Thursday - Grilled Kielbasa
Friday - Contingency Day

Sunday - Yoga Meltdown - Level 2
Monday - Rest
Tuesday - Ripped in 30 - Level 3
Wednesday - Zumba
Thursday - Bob Harper - Pure Burn Super Strength (Yowza!!)
Friday - Rest
Saturday - JM's Shed & Shred - Level 2 (No joke!!)

I'm thinking about bumping up to level 4 of Ripped in 30 this week, but we'll have to see how my week goes.

April 2015 Goals

Holy moly! It's already the middle of April!! How is this possible?! So, it's confession time. I failed miserably at my March goals. I'm not really sure I accomplished any of them!! Let's recap them anyway:

- Make & hang framed quotes in dining room - Nope.
- Create collage for dining room - No again.

- Share 2 new recipes - Didn't get this done either.
- Write and share post about doTerra - Want to guess? No :-(

- I'm planning to do a 10 day cleanse soon. YES!! 
- Run at least 1 day a week. - Ha, ha, ha! Not even close!

Ok, so I got one thing done. Since April has already proven to be busy, I think I'm going to pare the goals down again and try to do three. No categories, just whatever I come up with. Here we go:

• Make and hang framed quotes in dining room. - I'm persistent, aren't I?
• Post at least one recipe on the blog this month. Since I've already taken pictures, I'm hoping I can get this one done.
• Write at least 1 WIAW post. - I've change a couple of things with my eating since I did the cleanse and I'm looking forward to sharing them with you. So, stay tuned!

Alright!! There they are. I have complete faith in myself that I can get ALL of these done this month. I thought about adding another one, but I'm sticking with the KISS philosophy I mentioned the other day. Keep your fingers crossed for me, okay?!

Light Strawberry Pie

If you ask me, right now is theost wonderful time of the year. It's not the Christmas holiday season. It's really strawberry season! I absolutely love those juicy red berries. The only thing I don't like about this time of year, is that it's so short. We are lucky that we have a local farmer that grows berries that is close by. I make at least weekly trips out there once the berries are ready. The store bought berries have nothing on the fresh from the field ones that I pick at Wabi Sabi farms. I used to pick strawberries with my mom and grandmother when I lived in PA and love the memories that picking with my mom and daughter bring back.

So, I get all of these berries and can only eat so many plain, so what do I do with them? I make cobblers, pies, all kinds of desserts, freeze them for smoothies and I'm hoping to make a cake this year! Let's see if there is time for that!

It's sometimes hard to find desserts that are delicious but also easy on the waistline. But I definitely found one here. The jello helps to make it come together pretty quickly, too. Our diabetic neighbor even said it was delicious!! Here's the recipe:

Light Strawberry Pie
Source: Taste of Home
Servings: 8

2 pints fresh strawberries
2 T. cornstarch 
1 1/2 c. cold water
1 3-oz. pkg. sugar free strawberry jello
3 T. sugar
1 pie crust (1 used one from the frozen section)
Fat free whipped cream (optional)

Quarter strawberries and set aside. Meanwhile, combine water and cornstarch in a large sauce pan. Heat over medium-high heat until boiling. Allow to cook for 2 minutes or until sauce begins to thicken.

Remove from heat. Add gelatin and sugar and stir until dissolved. Add strawberries and stir to combine. Pour into baked pie crust. Refrigerate for 2 hours or until set.

Add whipped cream if desired. Enjoy!!

Weekly Menu Plan & Fitness Recap {4/13ish}

Hi friends! Yes, I am a little late getting this posted. But, as the Australians say, I've been, "Flat out like a lizard drinking!!" Seriously, things have just been crazy lately. And not because of any one big thing going on, it's just the everyday life sort of strawberries!!
I love them anyway, but especially like this...
We have been really busy with our day-to-day operations lately and something had to give. So, this time, it was the blog that suffered. I can't promise it won't happen again, it probably will. But that's life, right? I hope we can still be friends. :-)

So let's take a look at what I have planned for the week, shall we?

Sunday - Cauliflower Crust Pizza
Monday - Grilled Pork Chops
Tuesday - Grilled Turkey Brats
Wednesday - Spaghetti & Meatballs
Thursday - Grilled Turkey Patties

Saturday - Leftovers/Contingency Day

It's a low prep kind of week for the menu. Sometimes, it's just easier to remember KISS - keep things simple sweetie :-). Yes, I'm aware that isn't the typical saying, but sometimes you need to make your own rules.

I did really well with my workouts last week, too!

Just In Case

Happy Monday friends!! I forgot my camera with my pictures from Easter at my sister's house. My parents are supposed be dropping it off today on their way through, so until I have it and my pictures that I want to share, I thought I would share some other randomness with you all today!

I came across these pictures and thought they would be fun/interesting to share.

When I was about 7 months pregnant, an opportunity presented itself for me to qualify for my concealed weapon permit. I thought, what the heck and signed up. I'm so glad I did, too!! I had to use a cross-body purse instead of the traditional belt holster, but I successfully completed the course. I'm sure I was a pretty interesting sight, but that didn't matter. I out shot all of the women and a lot of the men in my class and did obtain my permit.

It's one of those things that you hope you never have to use, but it's good to have just in case!!

Weekly Meal Plan & Fitness Recap {4/5}

Well, hey there everyone! Happy Saturday!  Since tomorrow is Easter and is sure to be a pretty busy day for everyone, I thought I would write my meal plan post for the week today. I hope you're all having a wonderful weekend! It's been an on-the-go weekend for us. But we have still managed to find a little bit of time to rest. I'm so excited for the Easter Bunny to come to our house tonight. I think the kids will be pretty happy with their baskets. I'll definitely take some pictures and share them.
