Friday Fun - Home Improvement Edition

We made it!! It's Friday you guys!!! This has been the longest week I've had in a long time! Not sure what made it drag or so much, but in any event, we made it through the work week!! Yay!!!

We don't have any absolute definite plans for the weekend...yet. You know me, we always manage to find something to get into. I DO know that I am so ready to HGTV some things around the house. We bought this house in October and moved in the first part of November. We have the kids rooms done. That's it. In the last, I usually go straight from closing to the house and start painting or changing things in some way. When I buy a house, I like to personalize it ASAP.  We didn't want to get too much money tied up until we were out from under our multiple mortgage payments each month. While we still have TC's giant garage that we are in the process of building, we have a set number for that, so I feel like we can finally breathe a little bit and start tackling some of these projects that we've been putting off. We already changed out the fans on our back porch and upgraded our light fixture in the dining room, but I'm ready to paint and finally make this house ours!! Here are some of the rooms/elements I'm using as inspiration...

We are doing some local shopping this evening for this one, but might have to take a road trip to Ikea in Charlotte torrid if we can't find what we need.

4. Entryway: I decided earlier this week that I'd like to have a hall tree as our drop zone for backpacks, purses, coats, etc. they always end up thrown where ever and I've just gotten really tired of it! 

5. Curtains/Valances: I'm feeling pretty crafty and have decided to make some valances for some windows around the house. I am enlisting the help of my sister's mother-in-law for this one though. She helped my sister make some really cute valances for her house and we texted earlier this week about some options. I can't wait to get started on them! 

I have so many other projects that I want to get done, but these ones should keep me busy for a while!

Weekly Menu Plan & Fitness Recap

Hey guys. Coming to you a little later on a Sunday evening, but I'm still getting the post in. My eating was totally on-point today, which honestly surprised me!! I'm hoping I can keep it up!

Today was been pretty busy aging catch-up after 9 days away. Lots of laundry had to be done, those groceries weren't buying themselves and some sense had to be made of the chaotic that the house was left in. We got everyhing done today and as soon as I click post, I'm going to finish up my meal prep for the week. So let's get to it!!

That's a whole lot of miles for this girl! I decided to keep the streak going and got in another 3.56 miles today! I'm actually feeling like a runner again and I'd love to keep it up!

Playing Catch-Up

Well, hey there everyone!! Long time, no blog, huh?
We are actually on our way back to South Carolina as I am writing this post. So, hello from Wild, Wonderful West Virginia!!!

This is our "big" vacation for the year. We didn't want to commit a lot of money on a cruise or other vacation since we didn't know how long it would take us to sell our house and my townhouse. (Sooooo thankful to have both of those SOLD!!) It's hard to believe that it had been 2 years since I had last gone home. The kids have grown so much and I feel like so much has changed in my hometown. 

We had so much fun while we were in Pennsylvania. It's always sad for me to leave when I don't know when I'll be back up that way. It was especially hard this time for me two, not exactly sure why. We had a busy week with lots of fun times and and good food. But like all things, it had to come to an end.

My eating has been way off. I'm happy to report that I did get a run in 6 days while I was home for a total of 23.32 miles, 5.05 of those were yesterday alone! Woohoo!

I'm taking tomorrow (Sunday) to get organized and transition back into healthy eating again. But come Monday, I'll have my game face on! Back to the ole routine!!

The Best of Intentions

***I wrote this post on Monday, but it didn't publish***

Happy Monday everyone! I hope you all survived the first day back after a (hopefully) long weekend. Today was the first day in almost a month that I haven't been absolutely SLAMMED at work. It was nice to get back to a slower pace. That's not to mean I'm not busy, because I definitely am. But at least today, I knew which way was up. There were a few times the last month or so that I wasn't quite sure. 

Anyway, after a completely non-tracking, eat whatever I want few days, I was totally back on track yesterday. I was pretty happy about this, because I soooo want to be back on-plan. I know I shared with you all in my last post that I was planning to minimize the processed foods in my day and stick with clean, while (but not whole39...yet) foods. The day started off pretty good. I had a very points friendly breakfast of eggs with butternut squash.

When I got hungry shortly after, I had some water and that did the trick...for a little while. I had a good morning snack, 
But then things got pretty bad, pretty fast. I did have a very healthy dinner, 
But the damage is already done. I do have a hypothesis (7th grade science anyone) that I'm going to test out. The last time I had a day like this, with the out of control eating, I had one of my chai lattes. Last time, I blamed it on theack of sleep, but I'm wondering if it might be the Splenda and Sugar Free Coffeemate that I had in the tea. So tomorrow, I'm skipping the chai latte and seeing how my day goes. 

Why am I writing an entire blog post about this? Because I'm human. And so is everyone else out there. Sometimes, when we look at Instagram or other social media, all we see is what people want us to see. We don't see the pieces of candy or handfuls of chips that people sneak in between those super healthy meals. We've all been there and I know I'll be there again. I'm just hoping that it won't be tomorrow or for a while if I'm being honest. So, hang in there. Don't beat yourself up if you were back on track today like you wanted to be. I definitely had the best of intentions today, but got lost along the way.

Weekly Menu Plan & Fitness Recap {7/5}

Happy Sunday everyone! I hope you all had a safe a Happy 4th of July weekend! We had a good balance of busy and restful over the weekend. I got in lots of good eats...

And lots of exercise, too! 

I've been doing a lot of thinking about my Summer game plan (yes, I realize that it's already July!!). I was doing the 21 Day Fix, then I went back to WW. I'm thinking about trying a round of Whole30, but I really want to give it my all, so I need to wait for the right time. We are headed up PA next week, so I think I will wait until after we get back from that to start. Until then, I'm still counting points and I'm trying to eat as non-processed as possible. This will also give me a chance to be absolutely prepared for the Whole30. As I've learned before, the more prepared you are, the more successful you'll be.

Here is what I have planned for the week:

Wednesday - Grilled Turkey Burgers
Thursday - Cajun Caesar Grilled Chicken

Overall, I did pretty well with my workout for the week. TC was out of town for a couple f days, so I knew I wasn't going to get them all in. But it's better than nothing!

Wednesday - Rest
Thursday - Zumba
Friday - 3 mile run
Saturday - 3 mile run

I finished my long weekend with another 3 mile run today. It feels good to be getting some runs in again!! That humidity can be killer though!

Patriotic Pie

Do you want to make pie? Yes, I want to make pie. Let me see it in your eye...Yes! I want to make pie!!

Any other Backyardigans fans out there? I think this is one of my favorite episodes. I was so bummed when it went off the air!! If you're completely lost and have no idea what I'm talking about, you're missing out!! Google Samuri Pie. It's worth it..

Ok, moving on. I pinned this pie a while back. I think the recipe they used was super complicated, so I made my own version that was easy, peasy and came together pretty quickly. I made this last Sunday after we got back from our camping trip at Hunting Island (so fun!!). We had my parents and an out-of-town friend over for dinner and I made this for dessert. It was really good and would be perfect for the upcoming holiday weekend!

Here's the recipe:

Servings: 8

1 double pie crust (I used a box of Jiffy pie crust mix)
1 can blueberry pie filling
1 can cherry pie filling
Sugar for dusting

Seriously, this is so easy. Rollout your bottom crust and place in pie pan. 

Empty blueberry pie filling into pan. I built up 1/4 of the crust with this then I poured the can of cherry pie filling over top of the rest.  (I hope I explained that well.) you have to use both cans or you won't have enough filling.

Roll out the top crust. Cut out stars and place over top of the blueberry "corner." Then roll out some stripes of crust and place over the cherry filling. Dust the top of the crust with white sugar.

Bake for 30 minutes at 400 degrees. Remove from oven and allow to cool.


I'm telling you, for minimal effort, this is pretty impressive. I hope you enjoy it as much as we did.

We are headed out to dinner tonight, then I'm making some of these cupcakes for Addison's class picnic tomorrow.
