Weekly Menu Plan & Fitness Recap {8/30}

It's almost here!! I can feel it in the air! September first is just two (2!!!!) days away and that means that Fall will be here before we know it. Of course, that also means that Halloween, Thanksgiving and Christmas will be here before we know it, too. But let's not think about that. Let's just savor the fact that Fall will officially be here in approximately 24 days. I'm still torn on when it socially acceptable to start burning my pumpkin scented candles, break out my pumpkin scented hand soaps and start baking all things pumpkin, but I'll figure that out eventually.

This past week has been a crazy hectic week for me. I'm still swamped at work. We had way too many meeting last week and I have two already scheduled for Monday morning. That's too many meetings for a Monday if you ask me! But one thing took center stage at our house last week...TC's garage. This thing is pretty good sized. I could bore you with details. But I'll give you one picture of the construction and just say that I'm going to be so glad when it's done!!

This week will be just as busy, so I'm trying to keep things pretty simple and also to start eating the majority of our meals out of the freezer and pantry. Here's what I have planned:

I'm still loving Jillian's Body Revolution workouts. I'm doing them during the week and then getting my runs in on the weekend. I've been feeling pretty good for my long runs and the half marathon might become a reality. I think I'm going to wait another week or two before I finally decide.

Weekly Meal Plan & Fitness Recap

Well, hello there! I hope you're all having a wonderful weekend. Ours has been very nice. It's actually been a little more laid back than usual and I'm loving it!! It seems like we are always on the go and sometimes, it's nice to just relax a little bit.

I had a great run yesterday morning. I'm starting to feel like a runner again! I've been thinking about training for a half marathon later in the year, but I haven't decided yet. It's hard for me to get a run in during the week, so I'd have to do my training only on the weekend. I've talked to a couple of people that say it's possible, so we will have to see.

We are headed to church in a few minutes, so let's get to it. Here's what I have planned for the week:

Friday Fun Facts {8/21}

Happy Fri-Yay everyone! I’m so looking forward to this weekend for so many reasons. It has been a rough week for me and I'm so glad that it's finally going to be over!!  This weekend is probably going to be another busy one, so let’s just dive right in…

1. We have survived the first week of school! Addison started first grade on Monday. It really hopes that she loves going to school. Her teacher is a first year teacher right out of college. She seems just as excited as the kids and I have high hopes that it’s going to be another great year.

2. It seemed like as soon as school started, there was a change in the air. I felt like I could feel Fall in the air. I’m sure its totally a mental thing for me since the kids were all headed back to school, but it just seemed like I could feel/smell/see that Fall was headed our way. Honestly, since school is back in, I’m all for the arrival of Fall. This has been such a hot and humid Summer in our area and I’m ready for the cooler temps that come with Fall.

3. I’m also ready for all things pumpkin! I’ve been finding all kinds of things on Pinterest to make that use pumpkin. Some of my favorites are Mini Pumpkin Pies and a Pumpkin Pound Cake.<--- Are you kidding me?!?! I’ve also been buying all things that smell like pumpkin, too! Bath and Body Works has been having some good sales lately and totally sucked me in. I’ve bought my Sweater Weather Wallflowers, and pumpkin scented soaps and candles. Now, I’m just waiting for the most appropriate time to start using them! September 1st? October 1st? What do you think?

4. We finally have a whole foundation for TC’s garage. It took over a month and a half, but it’s finally done. As soon as the county inspector gives us the ok, it’ll be full speed ahead on getting that thing built.

5. Thank goodness my parents are headed back to South Carolina soon. My dad will be the foreman for the garage project and is coming back into town just in time. We have a dead line of December to have the whole building and all of the electrical work complete. It seems like such a long time from now, but will be here before we know it!

That’s it for now. Time to take care of some things so I can get started on this weekend.

Easy Turkey Pasta Casserole

Happy Thursday everyone! I hope you're all having a great week! We made it past Hump Day and are in the home stretch!

I was able to snap this picture on my way into work this morning. I have really been enjoying the beautiful sunrises that we’ve been having lately! I don’t mean to get too deep today, but sometimes, we get so busy that it’s easy to miss all of the beauty in the world around us. It’s nice to stop and take notice from time to time.

I’m back today with one of the new recipes I promised you in this week’s meal plan. This recipe comes from Skinnytaste. She is one of my favorite WW bloggers. I love when I’m able to find recipes that are easy, use ingredients that I already have on hand and the family loves. Camden had three helpings of this one. Granted, we had a busy day and he was pretty active, but I like to think that it’s because he liked it so much, more than the fact that he was probably extremely hungry!

Here’s the recipe:

Easy Turkey Pasta Casserole

Points+: 8
Servings: 8

1 lb 93% lean ground turkey
1 T.olive oil
1 c. chopped onion
1 bell pepper, chopped
1/4 cup finely diced celery
1/4 cup finely diced carrots
1 (14.5 oz can) petite diced tomatoes, drained
2 cups light spaghetti sauce
2 cups water
1/2 tsp Italian seasoning
1 tsp salt
8 oz shredded mozzarella cheese
8 oz uncooked pasta (I used Barilla Protein pasta)

Heat a large non-stick skillet over medium-high heat. Add ground turkey and season with salt and pepper. Cook until meat is browned. To this, add onion, pepper, celery & carrots. Cook until veggies are tender. Add in tomatoes, spaghetti sauce, water, Italian seasoning and salt. Bring to a boil, then lower heat to medium-low and allow to simmer for about 20 minutes. Meanwhile, preheat oven to 350°F.

Remove from heat. Spoon a little bit of the sauce into a 9x13 pan and spread over bottom. On top of this, pour in the uncooked pasta and spread over sauce. Cover the pasta with the rest of the sauce mixture. Top sauce with cheese.

Cover with aluminum foil and baked covered for 50-55 minutes. Remove cover and bake for another 10 minutes. Remove from oven and allow to sit for about 10 more minutes before serving.

Weekly Menu Plan & Fitness Recap {8/16}

Hello and Happy Sunday everyone!! I hope your weekend has been as fun as ours!! We headed out of town Thursday evening and spent a couple of nights camping and went to Carowinds amusement park Friday all day and Saturday morning.
The weather was gorgeous and we all had a really great time. Of course, my food choices weren't what you would call WW-friendly, but I tried to do better yesterday and was actually successful! We are headed to church this morning and then trying to get everything ready to start the week. I can't believe Addison starts first grade tomorrow!! Where has the time (and Summer) gone?!?! I'm so thankful that she is really excited. She loves school and really liked meeting her teachers at week. I hope her excitement for school continues for many years!

I'm trying a few new recipes this week and have the hopes of sharing them with you. So, let's see what I have planned:

Thankful Thursday {8/13}

Good morning everyone! I wanted to check in with you all one more time this week with a Thankful Thursday post. It’s been a while since I have shared one with you all. There is a lot going on right now and I’ve let a good bit of negativity creep into my thoughts. I’m trying to squash it and fight back with positive thoughts! So let’s go:

First and foremost, I am thankful for my two children. A family from our church is going through a very difficult time with their two year old little boy right now. When I got the news, I had to hug my kids and let them both know how much I love them. I know God has a plan for all of us, but sometimes, it can be hard to trust in that.

I am thankful for my wonderful husband. He is incredibly supportive of every venture/idea that I get us into. He is my partner, best friend and sounding board. Sometimes, I come up with some pretty crazy ideas. I’m thankful that he can be the voice of reason with me on some of the crazier ideas! Ha! Even though he is a great husband, but he is an even better father. My children definitely hit the jackpot in the daddy department and for that I am SOOOOOO thankful!

I am thankful for my amazing support group, mainly, my parents and sister. They always help me out whenever I need them. It’s not always an immediate need where I need them to do something other than just listen. They’re my sounding board. They definitely help to keep me grounded as well.

There are so many other things that I’m thankful for…my health, my job, our beautiful home, my co-workers that allow me to vent about my frustrations, I could really go on and on. But, I also have a long to-do list. So I will stop there and include one more thing that I’m thankful for…YOU! I’m so thankful for all of my readers/visitors. Thank you for coming back day after day!

Weekly Menu Plan & Fitness Recap {8/9}

Well hello there!! Happy Sunday everyone! I hope you're having a great weekend! We have been busy as usual, but hoping that today will be a little bit more low key for us. We have been busy around the house this past week, but still have quite a few things to do before we are done with our to-do list. I'm pretty happy with what we've done so far and can't wait to share it with you all!

The week started off pretty rocky for me with my eating, but I got things back on track towards the end. I'm hoping I can keep up the willpower and maybe actually see a loss on the scale this week!!

Weekend Recap {8/10}

Wow!! Where did Monday go? I hope yours went as quickly as mine!! This is the first few moments I've had to put this post together. As I told you yesterday, it was a pretty busy weekend. We got a lot accomplished, but still found time to relax and enjoy one of our last weekends before school starts.

Friday evening, we met my sister and her family for dinner then ran a couple of errands. I'm on a quest for a couch for, what is currently, our front living room. This is going to be converted into a playroom, but I have a feeling, it's going to end up as our primary living area in the months that we don't want to curl up by the fireplace. I have a very specific vision of what kind of couch I want in there and have been trying to find one for about a month now. I tried a couple out on Friday at La-Z-Boy, but still haven't made my decision yet. The quest continues...

Saturday morning, Addison and I met my sister and niece for a run with my Moms Run This Town group, or what should have been, but only one ther person showed up. We still had a great time and got some exercise knocked out. I love these runs with my group. Plus, Addison and I both got a medal. Who wouldn't love that?! After we got home, we had to get ready for a birthday party for a friend of Addison's. She had so much fun and is getting closer to learning out to swim without her PuddleJumper. It's a pretty exciting time for us!

Sunday was just a great and well-rounded day. I started by getting up early and knocking out a 3.56 mile run. I've really started enjoying running again. I wish I would have started with these early weekend runs sooner! We went to church and then did our grocery shopping. The rest of the day was spent relaxing, doing laundry, swimming, cooking, making valances for our breakfast area and a little more swimming. I was feeling domestic with the valances. Plus, they look pretty good, too!

All in all, it was just a great weekend! We are headed out of town again this coming weekend and it was nice to have a local weekend again to get some more stuff done around the house. I'm pretty happy that we are checking things off of the to-do list. But I still feel like there is so much to do. One thing at a time, right?

Weekly Menu Plan & Fitness Recap {8/2}

Wow! I started to write this title with a July date, then realized it was already August!! Where did July go?! Where did the Summer go for that matter?!! I. Ant believe that Addison starts back to school in just 2 weeks!! While I'm definitely looking forward to cooler temps that usually come with Fall, I'm so not ready for Summer vacation to be over yet!! We do have a few more things planned in the coming weeks and months, but I hate the thought of homework every night and the same morning and evening routine that goes with the school year. But since homeschooling definitely isn't an option for us, I guess I'll just have to deal with it, eh? Moving on...

We have made some headway with our half-bath project this weekend. After two trips to Home Depot, one to Lowes and a slew of other stores for some final touches, I think it'll all come together very nicely. We ended up having to order a new sink/vanity top since our vanity isn't a standard size. It's supposed to be in within 15 days. Here's hoping they out a rush on it.

I've had a horrible couple of days eating wise. I'm really not sure what's triggering it, but it definitely needs to get better!! Here is my plan for the week:

I started my Plyo Fix Extreme on Thirsday and was just struggling through the whole thing, so I decided to make use of our pool and finished my workout in there. I don't know why I didn't think of it sooner, but I'll definitely be adding some swims to my weekly fitness planning.
