Weekly Menu Plan & Fitness Recap {12/25}

Happy day after Christmas! I hope your Christmas was just as wonderful as ours was. We celebrated with all my family and just had a good day. We enjoyed watching the kids play with each other. My sister and I even got a quick run in while we waited for dinner to be ready.

I'm going to be off work all week this week and home with the kiddos while they're out of school. I'm planning to take down the Christmas decorations, clean the house and hopefully get it a little better organized. Wish me luck that I can do all this while the kids are home with me. I always have great plans for my time at home, but most of the time, the reality doesn't always hold up to those expectations. It's all good though, at least I get to be home with the kids. THAT is what is most important.

So, after being off track with my nutrition for a couple of weeks now, I'm planning to starting to get it under control starting today. Yes, I'm still planning to enjoy myself for New Years, but until then, it's game on!! Here's what I have planned for the week:

Weekly Menu Plan & Fitness Recap {12/18}

Hey there! Look who's back!!
I took another intentional but unintentional break from blogging again. The last couple of weeks have been absolutely insane!! Between TC being out of town, getting ready for the Color 5k and some AdvoCare events going on, it was all I could do to keep my head above water.
It's all over now and to be honest, the entire experience was one of the best of my life! It was so rewarding to put on such a successful event. We had over 500 people turn out to either run or help out with the Color 5k. It raised over $10,000 for our local children's shelter, put a spotlight on our cute little town and gave the community an opportunity to be active. Everyone was so appreciative and I'm so excited to get started on next year's event. I'm also going to have the opportunity for some new and exciting things coming up for our town and I can't wait!!

I think I'm finally done with our Christmas shopping and now comes all the wrapping. I still haven't found a Hatchimal for Addison though, so if you find yourself with an extra one this holiday season, please let me know and we can work something out :-) Surprisingly, my eating has stayed under control during all of this craziness. I typically eat anything and everything during my stressful times, but I was so busy with everything, that I was lucky if I got to eat at all!! I even made 4 batches of fudge and 3 batches of brittle this past week as well. I've had minimal amounts of both, which is a huge NSV for me as well! I love that I'm (mostly) staying on track during the holidays and still working towards those goals!!

I've stayed on track with my workouts and finished the week strong with a PR in the Cocoa Cup 5k that is a couple of towns away. I ran the hardest I ever have and am honestly pretty proud of myself. I love seeing what I am able to accomplish if I push myself.

Weekly Menu Plan & Fitness Recap {11/27}

Hi friends! I'm sorry for taking a week off from blogging last week. This whole not having the Blogger app on my phone is more of an issue than I thought. Until I find a better way around it or to deal with it, I hope you'll bear with me. 

I hope you all had a great Thanksgiving holiday. Ours was wonderful full of family, friends and sooooo much food!! Afterwards, my sister and I went shopping. I'm not going to lie, staying up until 2:30 am is so much harder in my more "mature" years. But we had such a good time together finding deals and Sparking the law enforcement to show our appreciation.

This week will be a go with the flow kind of week for us. TC is out of town on a hunting trip, so it will be just me and the kids (and my madre). I've tried to plan everything out as much as possible, but one thing I've learned recently, is that life can be very hectic and you never know what will come up. I did most of my meal prep today as well as the laundry for the week, so as long as nothing comes up tomorrow, I should be good to go.

Weekly Menu Plan & Fitness Recap {11/13}

Hey there! I hope you're all having a great weekend! We had a great evening Friday just relaxing and having Family Movie Night. I got in a great run Saturday morning. I'm loving these cooler Fall mornings. Today was the day of the half marathon I was training for. Even though I am still disappointed that I didn't get the 13.1 miles in I was planning to, I'm still thankful that I am healthy enough to be able to get a 3.5 mile run in today. The rest of the day was spent running errands, working on a couple of things in Camden's room and also catching the afternoon showing of Trolls. It's was a really cute movie and had a great message about finding happiness within yourself. I'm sure we'll be getting the dvd when when it comes out.

We are getting ready to ramp up into a busy season again with lots of events happening, and this week is the start of all of it. So, some of our meals are going to be aimed for convenience.

Weekly Menu Plan & Fitness Recap {11/7}

Hey there friends!  I’m excited to be checking in with you this morning to start the week strong.  I don’t know about you, but I love when we get to Fall back for the time change.  I woke up this morning with lots of energy.  I had a great workout and I’m ready to have a great day and an even better week.  Maybe it’s because I know I have tomorrow off due to the Presidential Election – Don’t forget to go out and VOTE!! – but whatever the reason, I feel great today!


We had a great weekend this weekend.  Friday we went golfing with some friends, Saturday was spent shopping and then around the house working on this and that.  Sunday started with our sweet niece’s baptism, followed by lunch with friends in downtown Charleston and ended with family movie night watching It’s The Great Pumpkin Charlie Brown and Charlie Brown Thanksgiving.  I’m so excited for the holidays and love that the temps have dipped enough to actually make it feel like Fall in the Lowcountry!!  I also had three great runs over the weekend to test out the foot.  It was a little sore, but nothing that a little bit of icing couldn’t take care of.  I’ve also gotten a brace for my foot and I think it’s really helped as well.


I have my menu all planned out and I’m ready to have a great on-track week and I’m looking forward to getting this bloat out of my body and starting to feel as good as I know I’m supposed to.  I actually planned out my breakfasts and lunches for the week in addition to the dinners. #overachiever Here’s what I have planned:

Life Lately {11/2}

Hey there friends! It’s been a little while since I posted on here and there are a couple of reasons for that. Nothing fun and exciting, so let’s get that out of the way now...The first reason is that I was having some issues with my Blogger app and deleted it with the intention of re-installing it to see if that worked. Well, when I went to re-install it, I discovered that the Blogger app is no longer available to download. #bloggerfail!! So, that means I’m going to have to write all of my posts at a computer. This is actually pretty hard for me, lol! We’re on the go a lot and it was so easy to write my posts while we were headed somewhere in the car. It was also a lot easier to upload pictures since I take them all on my phone. I’ll do my best to keep up with my posts, but I’m hoping to find another app that makes posting easier.

The second reason that I haven’t posted, if I’m being completely honest, is because I’m really struggling right now. I’m struggling with my nutrition as well as my fitness. I keep having the intention of getting back on track with my eating, but then something comes up, we go somewhere fun or Halloween hits. I’m starting the Lean Life Plan this week and hope I can stick with it. I know the first few days are the hardest, so here’s hoping I can get through, right? Ok, so I’ve been talking about training for my half marathon on here, too. It’s scheduled for November 12. Unfortunately, I won’t be running it this year. I started having some foot pain a couple of weeks ago. After a trip to m y doctor, an x-ray and an MRI, I’ve been diagnosed with tendonitis, inflammation and soft tissue swelling. I’ve been told to RICE (rest, ice, compression, elevation) my foot until it feels better and to NOT run any half marathons. Well, she actually said marathons, but I’m guessing she’d lump those together in the same category if I questioned it. As hard as it was for me, I took last weekend off from running. Shocking, I know!! My foot is feeling better, so I’m hoping that I can test it out this coming weekend with an easy run. I’m trying very hard not to be frustrated, but it’s disappointing to be working towards a goal for so long only to be stopped in my tracks very abruptly!! Moving on though…

I’m starting a new workout program next Monday that I’m pretty excited about and hope it helps to keep me on track through the holidays. Yes, I will splurge for Thanksgiving and Christmas, but hope I can keep it all under control.

Weekly Menu Plan & Fitness Recap {10/16}

We're halfway done with October. How is that possible?! This last week has just been a blur filled with lots of hurricane cleanup and too many indulgences. I'm glad that I was able to reign things back in and have been doing well since Friday morning. Hoping to keep the momentum going through the rest of the week and into next.

Menu Plan & Fitness Recap {10/9}

Hey there!! Well, we survived Hurricane Matthew. We decided to stay since it wasn't forecasted to be that bad. To be honest, at 3:00 am this morning, I was seriously regretting our decision to stay. You see, it was my first hurricane. I've lived here for 11 years and this is my first experience with a hurricane.

When you're in bed and hearing all of the loud noises outside, but can't see what they are, it's pretty nerve-wrecking. It's not much easier with the intense winds and rain in the daylight, but at least you know what's causing it.

Anyway, needless to say, this emotional eater was eating until her heart's content all weekend. So, it's time to get it back under control.

On a completely different note, I was able to hold Crow Pose today. I've been doing Yoga for years, but I'm not sure what changed today, but I held it. Sure, it was only for a few swords, but it's definitely a start!! Ok, ok, on with the plan...

Hey there! I hope you're all having a great weekend! It's has been pretty nice! Friday  evening was a family dinner at our house, then all the grandkiddos spent the night at my parents' house. They all had so much fun and we're talking about spending another night with them. My sister and I spent Saturday getting trained up by some of the best AdvoCare leaders in the Charleston area. I met a couple of new people and learned so much. I love having a company that helps you improve both yourself and your business.

Weekly Menu Plan & Fitness Recap {9/18}

Hey there!! Is it just is, or is everyone's life just extremely busy lately? I knew we had a lot of stuff coming up, but holy man! I feel like I can't keep up!! My eating has suffered a good bit this week, but I'm pretty happy that I was still able to stick with my workouts, even if I really wanted to go back to bed. Ha!!

We are just leaving Edisto beach this morning after spending a beautiful weekend down here. The mosquitoes were awful, but we didn't let them scare away the fun that we had! I finally got to meet another woman that was in the FB pregnancy group that I joined when I was preggers with Camden. It took us a few years, but we finally got our families together. The kids had so much fun and Addison is already asking when we can see them again. So sweet!

We just got off the ship and are headed home and back to reality. Apparently, I have to start cooking our meals again (and won't be getting tea time or nightly turn down service either). So, let's get this week's meal plan figured out.

We are going camping next weekend, so it will be quick and easy for a couple of days. But I'm planning to keep it under control this week before that.

Weekly Menu Plan & Fitness Recap {9/4}

Happy September everyone!! Can you believe that the Summer months are already over?! And we're already seeing posts about Pumpkin Spiced everything. Crazy!! September is the start of a pretty busy time for us. We are booked every weekend now until the middle of September. Throw in my half marathon training and I have a feeling that life will be pretty hectic for a while! The fun starts this week when TC and I leave for a cruise (sans kiddos) on Thursday.
I'm so excited and nervous at the same time. We are really looking forward to spending the time together though. TC's cousin and his wife are going with us, too, which makes it even more fun!

Weekly Menu Plan & Fitness Recap {8/28}

Hey there!! How has your weekend been? We've had a busy but very nice one so far. Last night I was able to catch up with an old high school friend that loves a couple of hours away. It was so nice to get together, but I was up way past my bedtime and didn't sleep very well. Needless to say, this morning's run took everything I had!

My cleanse is kicking off Monday morning. I'm trying to prepare for it with meal planning/food prep and mentally as well. Clean eating is definitely worth it, but not always easy! Having everything planned out and prepped ahead of time is something I've found to be key to success!!

Chocolate Chip Pudding Cookies

Last year, after Addison came home from her first day of school, she asked me if we could make cookies. It had been a pretty hectic day for all of us, so, I thought she had a pretty good idea. I called them "We all survived the first day of school" cookies. 

So, when the first day of school came this year, I made sure to have all the ingredients on hand to make cookies again. I think this is a great tradition to start and hope to carry it on with Addison and (sooner than I'd like) Camden. I'm sure the day will come that one or both of them will be too "cool" to make "We all survived the first day of school" cookies with mom. When that day comes, I may drown my sorrows by eating all of the cookies. But until it does, I will just eat a couple of them and enjoy the memories that I'm making with my kids.

Here's the recipe:


3/4 cup (1 1/2 sticks) butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 (3.4 ounce) package instant vanilla pudding
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 1/4 cups all-purpose flour
2 cups chocolate chips

Preheat oven to 350° F.  Combine flour and baking soda and set aside.  In a large bowl, cream together butter, brown sugar, granulated sugar and pudding mix.  Beat in eggs and vanilla.  Add flour mixture until combined.  Fold in chocolate chips.  Roll into 1″ balls and place on a greased baking sheet.  Bake for 8-12 minutes, or until golden brown.
