Mini Blueberry Pies

Are you all looking forward to the 4th of July holiday weekend as much as I am?!

I've had a crazy last couple of weeks at work and I'm so ready for an extra long weekend. I'm not exactly sure what we will do, but the break from the craziness (of work) is definitely welcome!! I'm still going strong with my 10 day cleanse and am feeling fantastic! I noticed a difference the second day of the cleanse, but I'm even more excited that the results are starting to show on the outside, too! That always helps to give me some extra motivation to stick with it!

If you've been following me for any amount of time, you know that I love any kind of cupcake, whether sweet or savory. Even better is when something is so incredibly easy to make. I found myself looking for something sweet to make that was also easy. I had some blueberry pie filling that I had taken on one of our camping trips, but never ended up using. I bought some refrigerated pie crusts to use for this, but then remembered that I had some won ton wrappers in the fridge that I needed to use. I wasn't sure if it would work, but I figured it was worth a try. Well, I'm so glad that I did because these were a huge success! They were so good AND so easy, too. I call this winning!! Here's the recipe:

Servings: 12

24 won ton wrappers
1 can light blueberry pie filling

Preheat oven to 375 degrees. Spray a muffin tin with non-stick cooking spray. Press one wrapper into each cup of the cupcake pan. Take a tablespoon of the pie filling and put into each cup. Repeat the layers of wonton wrapper and pie filling.

Bake at 375 for 12-15 minutes, or until wrappers are golden brown. Remove from oven and allow to cool. Top with a dollop of light whipped cream, if desired and ENJOY!!

See, I told you it was easy!!

Weekly Menu Plan & Fitness Recap {6/26}

Hey there! Happy Sunday! I hope you're all having a great weekend! My weekend started off with a great ladies night fitness group with some fabulous local Advocare ladies. I'm totally in love with the community that is developing with this company. Loving the connections that are being made. We had a booty blasting Barre workout.
Thankfully, I took some Nighttime Recovery to help with soreness and felt great yesterday! #stuffworks

We had a great day with TC's cousins family that we are blessed enough to be able to call friends, too. We had a nice day in the pool and enjoyed a delicious and (mostly) cleanse-friendly dinner. Just a fabulous day overall!

I'm on day 6 of the 10 Day Cleanse today and I'm feeling so, so good! It's amazing what a few days of clean eating can do for you!

Grilled Sweet Pepper Poppers

When we go camping, one of our favorite things to make is Sweet Pepper Poppers. We love to grill as much as possible - not only is grilled food delicious, but clean-up is so much easier when you use the grill!

We've tried a few different things when making these, but always come back to the classic. Some people prefer to use turkey bacon in order to make them a little bit healthier. You're welcome to try hat, but we've found that regular bacon just adds a little something extra that you don't get with anything else. Maybe it's the bacon grease, who knows. Now, the original of these also uses jalapeños, but my mom and I totally fell in love with the mini sweet peppers. We're not fans of spicy food and some of the jalapeños we've used set our mouths on FIRE! We don't have that problem anymore!!

Here's the recipe:

Servings: 4

1 bag of mini sweet peppers
1 8 oz. block of reduced fat cream cheese
1 lb bacon (can cut each strip in half)
seasoned salt

Cut the top off of each pepper and then cut pepper in half lengthwise. Scrape out all the seeds from inside of pepper. Using the back of a spoon, fill the pepper cavity with cream cheese. Sprinkle seasoned salt on top of cream cheese and then wrap bacon around entire pepper. Secure bacon with a tooth pick. Grill pepper on hot grill for 20 - 30 minutes flipping ever 10 minutes. Enjoy!

We like to set up an assembly line when we do these to make it easier. If I'm the only one working on them, I do one step at a time on all the peppers. This can be a little messy, but isn't that what camping is all about? Lol!!

Summer 2016 Goals

First, I want to wish my parents a Happy Anniversary! Today marks 53 years for them. Such a huge accomplishment these days!! So glad they have given me an example of making a marriage work! Here's to another 53!!

So, it's been a while since I came up with any goals, so with Summer starting on Monday, I thought I'd come up with some goals for the next 13ish weeks...

1. Read 5 books. This is a pretty ambitious goal for me given the fact that I probably haven't read that many books in the last year. But I love to read and am really going to try to do it more this Summer! The Amazon credits I received today will definitely help out, too!!

2. Run or walk 150 miles. This is another big goal for me. It means I'm going to have to be more consistent with my runs, forget the excuses and throw in some longer runs. I'll need all the motivation I can get!!

3. Finish the valances in the house. I bought material almost a year ago to make valances for the breakfast nook, master bedroom & bathroom and Addison's room. I finished the ones in the breakfast nook, but stopped there. I even forgot where I put the material for a while. Luckily, I found it a few weeks ago in the garage! Ha!

4. Try one new recipe every week. (The jalapeño popper recipe is coming soon!) This can be any kind of recipe. I'm a huge dessert fan, as you all know, and with Summer cookouts in full swing, I'd love to be able to find a way to enjoy dessert, but not blow my macros for the day!

5. Organize and sell or donate the baby items - we still have a TON of baby stuff in the garage. It's really in the way and needs to go. It all take a while to go through it all, but I'm hoping I can chip away at it. Maybe we'll have another yard sale, who knows?!

I'll stop with that. All together those all seem like pretty daunting goals to me, but maybe it will help to just take it one week or even one DAY at a time! Lol!!

Weekly Menu Plan & Fitness Recap {6/19ish}

Good morning everyone! I hope you all had a great weekend and that all of my fatherly friends had a very Happy Father's Day!

We definitely had another great weekend! It was a 3 day weekend for me, so it couldn't be all bad, right? Friday was a shopping day with my mom and sister (& Camden). We found lots of good sales and my closet got the update that it was needing! 

Saturday was spent relaxing and we got a boat ride in during the evening hours. So glad the kiddos finally got a chance to get out on the boat!

Sunday consisted of another run, church, time on the boat/lake and then a nice family dinner. It was just an all around nice weekend! I feel incredibly blessed to have the opportunity to spend quality time with my family and friends.

After going to bed later than I had planned last night, I had a rough night with a restless kiddo and that alarm went off way too early!  It was a no excuses kind of morning though and I still got my workout in with the 4 am club. I tried the sneak peek of Country Heat from Beachbody and was honestly pretty disappointed. I love Autumn Calabrese, but definitely won't be buying this workout program when it comes out.

This week is kicking off a busier than normal time for me at work, so I can already predict that today will be a multiple Spark day! Let's hope it goes quickly though!

Weekly Menu Plan & Fitness Recap {6/12}

Good morning from the beach! I just finished my run and am enjoying the absolutely beautiful morning while the rest of the family sleeps in. We've had a great time this weekend. This is definitely one of my favorite camping spots.

For the first time in awhile, I think we're NOT going to have a busy week! When was the last time I said that?! I'm hoping that nothing comes up to make me regret saying that though! I've definitely had many splurges this weekend, so it's  one to reign things in and get back on track this week.

Thankful Thursday {6/9}

Good morning! Happy Thursday everyone!! We've made it over the hump and are sliding into the weekend. Can you feel it?! I'm loving with a Summer mentality these days. Let's just get these work days over with so we can move on to the weekend fun!! The temps are on the rise in the South and our weekend is looking nice!! Perfect beach weather!!

Yesterday, Advocare absolutely made.my.day!! They brought back Limeade Spark!!

Summer Plans, Eats & Treats

Hey there! I just wanted to touch base with you all. I feel like it's time for a little honesty. I have really been struggling with my food ever since the cruise. I'll get back on track for a few days and then indulge in too many treats. I'm that analogy that if you trip going down a step, I'll throw myself down the rest. If I get a flat tire, I slash the other three. Am I making sense? When I start to get off track with my eating, I throw it all out the window and eat whatever I want to for the rest of the day. And I'm definitely not going to track it all. Because, as we all know, if we don't track it, it's like it never happened, right ;-) Yes. I'm kidding. But seriously, I need to buckle down, enter SUMMER!! This is one of the hardest times for me. We are so crazy busy during the Summer and try to jam-pack so many fun things in, that's it's really hard to make the healthiest choices in food. We are camping this weekend, are going to PA in July and also would like to make a long weekend trip to DC and also at least one trip to Carowinds (the amusement park we like.) We'd also would like to spend a few more weekends camping if we can pack it in.

So, what's my point? Well, I need to find something that works for this busy Summer lifestyle. After way too much thinking, I've decided to go back to the PointsPlus program. Am I going to stay my WW membership up again? Umm, no. I'm just being honest. I've been so all over the place, I'm not even sure I can stick with this. What I do know is that I was able to lose weight during the Summer with WW before, so why can't I do it again? Of course, I'm sticking with my Advocare products to help me out, but my eating plan will be WW-style. I just need the flexibility during this busy season.

I'm going to also try to keep the processed foods to a minimum, but I'm not going to beat myself up over a damn cupcake. Or chips. Or whatever I decide to splurge on at my next picnic.

So, here it is all it on the table. I'm showing you all of my cards and being completely upfront with you. I'd love all the accountability and support I can get on this long and meandering journey. Yes, I've come a long way, but this journey isn't over yet. I'm still working on a better version of myself everyday!

Weekly Menu Plan & Fitness Recap {6/5}

Good morning Friends and happy Sunday!! I had a very muggy and sweaty 4 mile run this morning. I even went a little earlier than yesterday, but that 80% humidity had already set in. I guess I can forget about having a decent pace until it cools down!! 

Addison did great in her dance recital yesterday. I'm definitely one proud mama! I love that she shares my love for dancing! It meant so much to me that all of my family took the time to come see her perform. I know it means a lot to Addison as well.

We are camping next weekend and I'm really looking forward to it. We're planning to start packing later today so we aren't doing some mad packing Thursday evening.

Life Lately {6/3}

In an effort to not be the blogger that only posts about meal plans, I thought I would pop in for an update on what we've been up to lately. It's been a whirlwind last few months for us!! 

After we got back from the cruise in early April, we only had a couple of weeks before we were back in Florida for a long weekend.
Saturday, I attended the Ladies Alive event put on by Advocare. I had such a great time, heard some wonderful stories and made so many connections. I can't wait for next year!
We decided to make it a long weekend and hit up Disney World for a day while we were there. The kids had such a great time!!

A couple of weeks later, we celebrated Addison's 7th birthday. It was so much fun and I think the birthday girl definitely enjoyed herself!

We had end of school year craziness, which I don't remember experiencing as a child, but maybe my mom was just able to hide it well.

Camden's 3rd birthday was on the 25th of May and his party was the following Saturday.
That week was insane and actually included an evening trip to the ER to try to find out what was causing his 105 degree temperature.
So stressful!! We were sent home after being told it was a virus. We took the poor guy back to urgent care on Memorial Day because he just couldn't shake a low grade fever and still wasn't himself. It didn't take long for him to be diagnosed with an ear infection. No wonder he was dreading bath time so much!! Thankfully, I think he is finally bouncing back.

I enjoyed a relaxing day off today and look forward to my Flex Friday's home with the family during the Summer!

We have Addison's dance recital tomorrow and a trip to our favorite state park next weekend that I'm really looking forward to! Im hoping to get back into a better running routine and start racking up some major mileage!! Hopefully, Mother Nature will be more cooperative than she was last weekend!

I hope life has been treating you all well lately and that you all have an amazing Summer!
