Weekly Menu Plan & Fitness Recap {8/28}

Hey there!! How has your weekend been? We've had a busy but very nice one so far. Last night I was able to catch up with an old high school friend that loves a couple of hours away. It was so nice to get together, but I was up way past my bedtime and didn't sleep very well. Needless to say, this morning's run took everything I had!

My cleanse is kicking off Monday morning. I'm trying to prepare for it with meal planning/food prep and mentally as well. Clean eating is definitely worth it, but not always easy! Having everything planned out and prepped ahead of time is something I've found to be key to success!!

Here's what I have planned for this week:

Fitness Recap:
Since TC ended up having to work yesterday, my long run day turned into a short run day with a jogging stroller. We had such a good time figuring out all the colors we were seeing. So fun!

Chocolate Chip Pudding Cookies

Last year, after Addison came home from her first day of school, she asked me if we could make cookies. It had been a pretty hectic day for all of us, so, I thought she had a pretty good idea. I called them "We all survived the first day of school" cookies. 

So, when the first day of school came this year, I made sure to have all the ingredients on hand to make cookies again. I think this is a great tradition to start and hope to carry it on with Addison and (sooner than I'd like) Camden. I'm sure the day will come that one or both of them will be too "cool" to make "We all survived the first day of school" cookies with mom. When that day comes, I may drown my sorrows by eating all of the cookies. But until it does, I will just eat a couple of them and enjoy the memories that I'm making with my kids.

Here's the recipe:


3/4 cup (1 1/2 sticks) butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 (3.4 ounce) package instant vanilla pudding
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 1/4 cups all-purpose flour
2 cups chocolate chips

Preheat oven to 350° F.  Combine flour and baking soda and set aside.  In a large bowl, cream together butter, brown sugar, granulated sugar and pudding mix.  Beat in eggs and vanilla.  Add flour mixture until combined.  Fold in chocolate chips.  Roll into 1″ balls and place on a greased baking sheet.  Bake for 8-12 minutes, or until golden brown.

Weekly Menu Plan & Fitness Recap {8/21}

Well, we survived the first week of school! It honestly wasn't that terrible of a week, but the homework hasn't started and neither have Addison's dance classes. I know things will get a bit more hectic once those are added into the mix. I also have jump into coordinating a Color 5k race in my town that is coming in December. I'm really excited about it, but know that things will be crazy for a while. I guess I thought life wasn't crazy enough already!!

Fitness Recap:
I had the best run today that I've had in a long time. I'm not sure exactly what it was, but it just felt great. My pace was a little slower, but my distance was over 7 miles. So happy about this!

Slow Cooker Dinners for Busy Weeknights

So, the school year has started. We have two days under our belt. It's been a bit of an adjustment for me. Not only because it means I have to drive the whole way across town and back every morning, but the doors to school open 15 minutes later this year. This is a problem for me and made me have to adjust my workday. I no longer get off work at 4:30 every day :-( which means I don't have as much time after work to cook dinner and have it ready for TC, who now gets home about 5-10 minutes after I do. 

I've decided that the slow cooker will become my new best friend! The only problem I'm having with the recipes I'm finding is that most of them have cream of something soup in them. Here's the thing, I love cream of sodium soup as much as the next gal, but it's definitely not considered to be "cleanse-friendly."  I'm gearing up for another cleanse the end of the month and am prepared to have nothing but success! So, what I've done is put together these recipes to have in one convenient place to refer to once the meal planning and prep start for that cleanse.

Some of these might need to be slightly modified or I will make my own homemade version of an ingredient, but I think they can all fit in with the cleanse.

Weekly Menu Plan & Fitness Recap {8/14}

I was dealing with a stomach bug the middle of the week, so my workouts got a little off track, I still tried to stay active, but my workouts definitely didn't go the way I had planned. I struggled with some of my running this weekend, too. I tell you, those stomach bugs really take their toll!

Weekly Menu Plan & Fitness Recap {8/8}

Well, it's the last week of Summer break in our house. I don't understand parents that get excited when school starts again. Life is so much more hectic and stressful during the school year.

We came up to Carowinds for a little more family fun. It was pretty hot and we ended up in the water park earlier than when we usually go.
This is me trying to stay hydrated in the heat. 

They expanded the water area over the off season and the kids love it. The only problem is when you have other (bigger) kiddos that lack the respect and manners and push my kids out of the way. We got frustrated and headed back to the campground to enjoy the pool there and relax for the evening. It was nice to cook our own dinner and save a little extra money.
