Mummy Pizzas

Hey everyone! I hope you're all having a great week! I'm so glad the week is almost over! I'm really looking forward to this coming weekend. We have a pretty busy Saturday planned including my long run (I should hit my 13.1 this weekend!!), visiting friends and some trick-or-treating. It's going to be a pretty busy day, but so much fun!! 


In keeping with the Halloween-theme, I made these mummy pizzas a couple of weeks ago. They're cute, easy and delicious! They were a pretty big hit with the kids, too! I'll give you the recipe for one and just multiply it by however many you need to make.


Mummy Pizzas
Servings: 1
Points+: 4

1 piece of high fiber bread
1 T. pizza sauce
1 piece part-skim mozzarella cheese, cut into strips
2 mini turkey pepperonis

Spread pizza sauce over bread. Arrange cheese strips on top of sauce to resemble a mummy. Place pepperoni for eyes. Place in toaster oven or under broiler just until lightly toasted and cheese starts to bubble.

You can also use sliced black olives for the eyes. But I knew my family would like the pepperonis better.


I served these along with some hearty soup one Sunday evening. That recipe will be coming soon, too. So be on the lookout.

Weekly Menu Plan & Fitness Recap {10/25}

Good morning friends! For some reason, coming up with this week's meal plan was tough for me! I'm planning on starting the 21 Day Fix November 1st. So I'm trying to save all my super clean eating dinners for that. I wanted to keep things on the healthier side, but still get some yummy hings in that won't be Fix-Approved. The rest of the family is still in bed and will be getting up any minute, so let's get to it.

Weekend Recap {10/19}

Happy Monday friends! I hope this Monday is taking it easy on you. As promised, I'm back today with a recap of the weekend's festivities.

Friday was my day to work :-( but as soon as I got that out of the way, we packed up and headed to my parents house. After dinner, I set out to try to get some miles for my running group's challenge. It was a beautiful evening and I was able to get 4.25 miles in (with TC's company on the bike) before the darkness set in. Just about the time I got back, my sister and niece showed up, which got Addison pretty excited! The kids played while my sister and I tried our hand at making some signs for the parade the kids were going to be in the next day. Since we had two princesses, we decided on a "Twice Upon a Princess" theme. It took a while, but we got all the signs colored and glittered up!

The next day, my sister and I set out and was able to get 4 more miles in. After we got back, it was full-on dance mom mode.
We did hair, makeup, dresses and more glitter.
We dressed Camden as a pumpkin to go with the princesses.
We all made it up to the parade about 15 minutes before it started. The parade was for the Peanut Festival in the town where my parents live. It was a very short parade, but everyone had a great time.
My parents let us use their (replica) 1928 Ford Model A.

It was just a fun day for all of us. We hung out at the festival afterwards with TC's cousin and his wife and adorable baby boy. After that, we headed back to my parents for dinner and 3 more miles (walking) with my sister. After dinner, we headed home just in time to put the kids to bed so TC could watch the Clemson game.

Sunday was my long run day and all of the other exciting normal Sunday activities (grocery shopping, laundry, etc.) although the kids did have a lot of fun making faces on the pumpkins hat I got at the grocery store.

I woke up early this morning for my Yoga Fix (the stretch felt great on my sore running muscles) and I'm ready to face the week!

Meringue Ghost Cookies

Happy Thursday everyone! We made it through hump day and are on the down hill slide to the weekend! I'm really looking forward to the weekend more than normal! We have some pretty exciting things going on, especially for Addison and Camden. I will fill you all in with lots of pictures after the weekend. I might do a weekend recap just to get it all in. The kids are definitely going to have a good time!


I've decided that I'd like to share some recipe posts with you all for the Fall. My goal is to share one recipe a week with you that we've tried. This week, I'm sharing these adorable Meringue Ghost Cookies. Addison and I made them Sunday afternoon and had so much fun. The hardest part is waiting for them to bake and then allowing them enough time to cool. Addison has my (lack of patience) but she did great waiting for these. I love meringue, especially when it's home made! And how cute are these as ghosts?

Here's the recipe:

MERINGUE GHOST COOKIES
Points+: 1

Servings: 20

4 egg whites
1/2 t. cream of tartar
3/4 c. sugar
1/2 t. clear vanilla extract
candy eyes

Preheat oven to 200 degrees. Line a baking sheet with parchment paper and set aside.

In a mixing bowl, combine the egg whites, vanilla and cream of tartar and beat on medium speed until the mixture begins to froth. Gradually add in the sugar (I added mine in 1/4 cup at a time). Increase speed to medium-high and beat the mixture until stiff peaks form, about 5-6 minutes.

You can use either a piping bag with a round tip, or I used a gallon size Ziplock freezer back with the corner snipped off. Spoon the meringue mixture into the bag and pipe little mounds onto the parchment paper. Add the candy eyes to the ghosts before you put in the oven.

Bake for approximately 1.5 hours at 200 degrees or until the meringues are dry and crisp when you touch them. Turn the oven off and leave them in the oven for about 3 hours. This allows them to completely dry. ENJOY!!

These can be stored in an air-tight container for up to 3 days.

These were so much fun to make and they really are easy. I took a few to work to share and everyone got a kick out of them and said how good they are.

A Clean Eating WIAW {10/14}

Good morning SLY friends! In an attempt to be more accountable, I thought maybe I'd post another WIAW update. I'm participating in a clean eating challenge this week with one of my blogger mamas. It's amazing how mentally challenging something like this is for me. As soon as I know I have to restrict myself, I all of the sudden want all.the.junk!! THIS is why Weightwatchers works so well for me. Anyway, with my birthday last week and camping over the weekend, I had gotten pretty far off track with my eating, so I figured some clean eating was just what this body needed.

I did pretty well with my eating on Monday (as you'll see in this post) but Tuesday was a bit of a struggle for me. As I've mentioned before, I am so incredibly structured and a creature of habit. So, when my day didn't go as planned, I got a little derailed. I had my lunch packed, but yesterday was my supervisors birthday and we all decided to go out to lunch. I still did pretty good by ordering a grilled shrimp salad, but it still wasn't what inhadbplanned for ther day. I ended up having a pretty indulgent brownie when we got back to the office. I also had some extra snacks and even though they were still clean eats, I hadn't planned on them. Ah well, what can you do. I am determined to make today a better day though!

Breakfast:
Eggs with sweet potato hash and pineapple

Snack:
Almonds and clementines

Lunch:
TJ's Chicken Chile Lime burger and green beans

Snack:

Hard boiled eggs and grapes

Dinner:
Grilled pork chops, brown rice and broccoli (pretty typical of a Monday meal.

I also had some stove popped popcorn during lunch, too. It's become one of my favorite snacks!!

Weekly Menu Plan & Fitness Recap

Hey there!! Happy Sunday!! I'm posting a little late today because we were camping again and didn't have very good service where we were. Plus, I planned our week out on the way home. We had such a great time. My birthday was last Thursday and I decided to make it an extra long weekend and took the day off. I had a wonderful day shopping with my mom and a friend of ours. I also made a trip to Trader Joe's. It's always a good day when I make it to TJ's!! 

It looks like this is going to (hopefully) be a pretty calm week for us. After a week with strep, then the kids being out of school for three days last week due to flooding and questionable road conditions, I'm ready for a low-key week!
