Veggie Fajitas



I think we might have to build an ark! It was a really nice day up until about 5:00, then the bottom fell out. It rained and hailed. The good news is that we have a dead tree that has been leaning (away from the house) that we didn't want to pay the crazy amount to have it taken down. So we decided to let Mother Nature take care of it for us. She finally came through tonight and the tree came down. It looks like it only damaged a couple of planks on the fence, so it should be pretty inexpensive to fix. Thank goodness!

With TC working late tonight, I wanted something quick and easy for dinner. I bought some chicken sausages at the grocery store and decided that the best thing to go with those would be veggie fajitas. I add some mushrooms to these to add a little bit of meatiness. I will sometimes eat these for lunch. They're really good and really filling, too. Here's the recipe:

VEGGIE FAJITAS
Servings: 1
Points+: 5



1/2 red bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
1 small onion, thinly sliced
1 c. mushrooms, sliced
1 t. fajita seasoning
2 FF flour tortillas, taco sized

Over medium heat, heat a skillet that has been sprayed with non-stick cooking spray. Add all veggies and fajita seasoning. Cook over medium heat until veggies are tender. Divide evenly among the tortillas. If you want, you can top with shredded cheese or sour cream. Enjoy!



EXERCISE:
Well, I'm still undecided on this one. I was planning to do Jillian Michael's Ripped in 30, but now I'm thinking about doing Bob Harper's Totally Ripped Core. Life really full of tough decisions! I will let you know what I end up doing on Facebook after I'm done. Tune in later for the results!

  1. That looks delicious! How scary about the tree! Thank goodness not a lot of damage was done! We went and checked out a couple of gyms to join tonight. Big difference in price not a huge difference in the amenities.

  2. Jill - We've been waiting for it to come down, so it's actually a good thing :) Nice that you can find a gym with nice amenities but at a lower price. Hope you found one that works for you.
